Wind fritters

Madkes 3 dozen

INGREDIENTS
2 cups (500ml) water
pinch of salt
100g butter
2 cups (240g) flour
5 eggs
finely grated lemon rind
oil for cooking

PREPARATION
Place water, butter and salt in a saucepan and slowly bring to the boil.
As soon as the mixture boils, quickly stir in flour, using a wooden spoon.

Cook over a low heat beating constantly until mixture is smooth and leaves sides of pan. Remove from heat and set aside to cool.

Beat in eggs, one at a time, beating well after each addition and until mixture is light and
glossy.
Heat oil in a saucepan and spoon some batter into the hot oil.
Use a small spoon as these fritters puff while cooking.

Fry them over a low heat until well puffed.
Intensify the heat and keep cooking until golden.

Drain on absorbent kitchen paper and serve sprinkled with caster or icing sugar.
