2 ½ cups (300g) flour
100g walnuts, finely chopped
250g butter, at room temperature
½ cup (65g) caster sugar
1 teaspoon vanilla essence
Sift flour and mix it with walnuts.
Place mixture onto worktop, make a well at the centre.
Place cubed butter, sugar and vanilla essence in the well and work with your fingertips to form a smooth dough.
Knead gently and shape it into a ball.
Wrap it in plastic food wrap and refrigerate for 1 hour.
Remove from fridge. Shape the dough into two 5cm thick ropes.
Using a very sharp knife, cut the ropes into 1cm slices.
Place them onto ungreased baking sheet and bake in a cool oven for 10-12 minutes, before they get golden.
Remove from oven and cool on wire racks.
Serve sprinkled with caster sugar.
You can also decorate them with piece of walnut on top, before baking.
