Makes: 3 dozen
INGREDIENTS
100g butter, at room temperature
1/2 cup (100g) sugar
2 eggs
1 teaspoon vanilla essence
2 1/2 cups (300g) flour
1 teaspoon baking powder
pinch of salt
1/2 cup peanuts, ground
PREPARATION
Beat butter and sugar until creamy.
Add eggs, one at a time, beating vigorously after each addition.
Fold in vanilla essence and peanuts.
Sift together flour, baking powder and salt and fold into mixture to form a rather soft dough.
Shape into a ball, wrap in food plastic wrap and refrigerate for about 30 minutes.
Roll out over a floured surface and cut out biscuits of the shape and size you desire, with a floured cutter.
Place on a baking sheet and cook in a moderate oven for about 12 minutes.
Remove from oven and cool on wire racks.
These biscuits can be stored in tins or hermetic jars for several days.
