500g bread, sliced, crusts removed, cut into small pieces
4 medium sized apples
10 tablespoons sugar
1 teaspoon vanilla essence
Place bread and milk in a bowl, until well soaked.
Peel, core and cube the apples.
Whisk the eggs with some of the sugar.
Add the raisins and vanilla.
Stir in the apples and soaked bread. Mix well.
Line the sides and bottom of a pudding basin or ovenproof dish with caramel.
Pour the mixture into it and bake for about 40 minutes or until tested with a skewer.
Cool for a few minutes before turning out.
