Prune and walnut pastries

Makes: 24

1 cup prunes, soaked and chopped
½ cup walnuts, chopped
200g plain sweet biscuits, crushed
2 tablespoons butter
1tablespoon cognac (French brandy)
½ cup (125ml) cream, double

Place prunes, walnuts, biscuits, butter and cognac in a bowl.
Mix well and stir in cream.
Work the mixture with your hands and form it into a neat sausage shape.

Sprinkle with caster sugar and wrap in aluminum foil or plastic food wrap.
Refrigerate until set.
Remove from fridge and slice or shape into small balls.
Serve in chocolate cases.
