Makes 2 dozen
INGREDIENTS
2 egg yolks
2 egg whites
125g butter
1/2 cup (100 g) sugar
finely grated rind of one orange
1/2 cup (125 ml) orange juice
1/2 cup (125 ml) honey
2 cups (240 g) flour
2 teaspoons baking powder
PREPARATION
Whip butter with sugar until creamy.
Add the egg yolks one by one, beating well after each addition.
In another bowl, sift together the flour and the baking powder.
In a third bowl, mix the orange juice, the honey and the orange rind.
Add the sifted flour to the first mixture, alternating with the orange juice and honey and mix well.
Whisk the egg whites until they are stiff and fold into the batter to form a soft dough.
Drop heaped spoonfuls of dough onto a well greased baking sheet and bake in a moderately hot oven until golden.
Remove from the baking sheet onto a wire rack and cool.
They can also be baked in small muffin tins.
