21/2 cups oatmeal*
Pinch of salt
1/2 cup (100g) sugar
50g butter, at room temperature
1 teaspoon vanilla essence
2 teaspoons baking powder
Beat butter and sugar until creamy.
Add slightly beaten eggs and mix well.
Fold in vanilla essence. In another bowl, mix oatmeal, pinch of salt and baking powder.
Fold into egg and butter mixture to form a soft dough.
Drop teaspoons of mixture, some cm apart onto greased baking trays.
Bake in a moderate oven (375ºF/180ºC) for about 12 minutes or until slightly golden.
