1 cup brown sugar
1 cup (250 ml) soy milk
100g walnuts, chopped
1 small coffee mug of oil
FOR THE SYRUP
1 ½ cup (375 ml) water
1 cup (200g) sugar
1 tablespoon lemon juice
To prepare syrup, boil water and sugar over the heat for 10 minutes.
Remove from the heat and add the lemon juice. Cool.
Place semolina, sugar and oil inside a mixing bowl and add the soy milk slowly.
Stir in the chopped walnuts.
When everything is well blended, pour the mixture into a small well greased tin and bake in a moderate oven for about 30 minutes or until the semolina is golden brown.
Cut the pudding into small pieces while still warm and spread with cold syrup.
Decorate each piece with a half glacé cherry.
