They are called like this because no eggs, sugar, milk or butter are required to prepare these delicious cookies
Makes: 4 dozen
4 cups (480g) flour
3 teaspoons baking powder
½ teaspoon salt
2 cups finely grated carrots
2 teaspoons finely grated orange rind
3/4 cup (190ml) orange juice
1/2 cup vegetable oil
2 tablespoons artificial liquid sweetener
Sift flour, baking powder and salt into a bowl.
Add grated carrots and orange rind and mix well.
Place orange juice, liquid sweetener and vegetable oil in another bowl, mix well and stir into dry ingredients.
Turn dough onto a lightly floured surface, gather into a ball and knead briefly.
Wrap dough in plastic food wrap and refrigerate for about 30 minutes.
Roll out dough to a very thin oblong and cut out cookies with a 5 cm floured cutter.
Place on baking trays and bake in a moderate oven for about 12 minutes or until golden. Remove from oven and cool on wire racks.
These crispy biscuits taste and smell delicious and can be stored in tins or jars for several days.
