Light orange chocolate muffins

Makes: 16

1 egg
3 egg yolks
½ tablespoon sugar
2 ½ cups (300g) flour
1/2 cup cassava starch
2 tablespoons bitter cocoa powder
1 tablespoon baking powder
1 teaspoon bicarbonate of soda
pinch of salt
finely grated rind of 3 oranges
juice of 3 oranges
1/2 cup (125ml) vegetable oil
2 tablespoons artificial liquid sweetener
3 egg whites
½ tablespoon sugar

COMMENT: The cocoa powder you should use must be bitter, as the regular one contains sugar. Bitter cocoa powder is low in calories.

Beat egg, egg yolks and ½ tablespoon sugar with electric mixer for 7 minutes.
Set aside.

Sift flour, cassava starch, baking powder, bicarbonate of soda, cocoa powder and salt.
Fold in orange juice, vegetable oil, orange rind and sweetener.

Beat egg whites and ½ tablespoon sugar until firm.
Beat in egg mixture.
Keep beating for 6-7 minutes.

Spoon mixture into slightly oiled muffin tins up to 2/3 of their height.
Bake in a cool oven until well cooked.
