Light apple pudding

Serves 10

150g low-fat ricotta cheese
1tablespoon baking powder
4 green apples, grated
1 teaspoon vanilla essence
finely grated rind of 3 oranges
juice of 3 oranges
6 tablespoons powdered skimmed milk
3 egg yolks
liquid sweetener as required

Process the ricotta cheese in a food processor.
Stir in grated apples, vanilla essence, baking powder, orange rind and juice, powdered skimmed milk, egg yolks and sweetener.

Blend well until you obtain a soft mixture.
Pour it into a slightly oiled loaf tin and bake in moderate oven for approx. 45 minutes. Remove from oven and cool for some minutes before turning out.
