Giant cookie filled with dulce de leche

Serves 12

INGREDIENTS
6 egg yolks
6 tablespoons milk
6 tablespoons butter
flour as needed
1kg of dulce de leche*
dulce de leche is a Uruguayan and Argentine product. It is jam prepared with milk and sugar. It can be translated as milk jam and it tastes quite much as caramel, though it is not so sticky. It is more creamy.

PREPARATION
Melt the butter in the microwave oven or in a double boiler, add the milk and all the 6 egg yolks in one go.

Add the necessary flour and work the mixture to a firm dough.

Divide the dough into 12 even-sized pieces and let it rest for an hour or more.

Roll out each piece into a very thin circle of 20 cm of diameter. The dough must be almost transparent.

Place the circles on baking sheets (without greasing) and prick them.

Bake the circles in a moderately hot oven for a few minutes.

Remove from the baking sheet and cool on a wire rack.

Spread some milk jam over one circle. Cover it with another circle. Spread some more milk
jam over it and cover with a third circle. Repeat the procedure until you have used all the
circles.

You can decorate with a fluffy frosting and sprinkle with some chocolate chips.

COOK’S TIP: It is convenient to let it rest for a day before cutting into pieces.
