100g butter, softened
1 cup (200g) sugar
2 eggs, slightly beaten
1 ½ cup (145g) oats
¾ cup (90g) flour
2 teaspoons baking powder
1 tablespoon cocoa powder
½ cup (80g) almonds, chopped
3 drops almond essence
Beat butter and sugar until creamy.
Stir in eggs and almond essence. Keep beating.
Fold in oats, flour, baking powder, cocoa powder and chopped almonds to form a soft mixture.
Drop teaspoons of mixture apart onto greased baking trays.
Bake for 15 minutes or until crisp.
Remove to wire racks to cool completely.
They are delicious and crunchy!
