Makes 3 dozen
2 cups (400 g) sugar
1 cup (130 g ) cocoa powder
100g butter, melted
1 cup (120g ) flour
1 teaspoon baking powder
1 cup peanuts, roasted, peeled and chopped
Beat the eggs and sugar until thick and creamy.
Cut the butter and melt in microwave oven or in a double boiler.
Stir into the eggs and sugar.
Fold in the sifted flour, cocoa powder, baking powder and the chopped peanuts.
Pour the batter into a well greased and floured square or rectangular tin.
Bake in a moderate oven for about 30 minutes or until tested with a skewer.
Remove from oven and cut into squares while still warm.
