6 medium sized bananas
1 1/2 cups (180g) flour
pinch of salt
1teaspoon baking powder
3/4 cup (150g) sugar
1/2 cup (125ml) milk
Sift flour, baking powder and salt into a mixing bowl.
Add and mix sugar.
Rub the butter into the sifted dry ingredients with your fingertips until mixture resembles coarse bread crumbs.
Place part of this mixture onto the base of a well greased and floured 22x22cm tin.
Peel and slice bananas. Place half of them on the mixture with small pieces of butter.
Repeat procedure with remaining mixture and bananas.
Whisk eggs slightly.
Stir in milk and pour onto preparation.
Sprinkle with sugar and bake in a moderate oven until golden. Serve warm.
