1 melon, sweet and ripe
3 tablespoons sugar
½ mug of strong coffee
1 tablespoon of cognac (French brandy)
2 tablespoons lemon juice
Cut the melon in half and discard the seeds.
Scoop the flesh into balls, using a melon baller and reserve the shells.
Place the melon balls in a bowl. Chill.
For the dressing:
Mix the sugar, coffee, cognac and lemon juice in a bowl.
Stir well until the sugar dissolves.
Pour the dressing over the chilled melon balls , toss well, then spoon the mixture into the melon shells and chill again until serving.
