Chocolate sponge cake

Serves 10

6 eggs
200g sugar
200g ( minus 2 tablespoons) flour
4 tablespoons powdered chocolate
½ teaspoon bicarbonate of soda
2 teaspoons baking powder

Whip the eggs and sugar with an electric mixer for 15 minutes.
Sift the flour, the chocolate, the bicarbonate and the baking powder and fold into the eggs with a spatula.

Bake in a moderately cool oven for 40 minutes in a well greased tin.
Cool in the tin for a few minutes before turning out to cool completely on a wire rack.
