100g butter, softened
4 tablespoons honey
4 tablespoons raw sugar
3 tablespoons cocoa powder
2 1/2 cups (300g) flour
1 teaspoon baking powder
pinch of salt
Beat butter and sugar until creamy.
Beat in honey and egg.
Sift together flour, baking powder, salt and cocoa powder.
Fold into butter mixture and work to a firm dough.
Knead to a ball shape and set aside for 30 minutes.
Roll out dough and cut circles with a floured cutter.
Place circles over greased baking sheets and bake in a moderate oven for about 12 minutes.
Remove cookies from oven and sheets and cool over wire racks.
