Chocolate and honey coating

1 cup (200g) sugar
1 tablespoon honey
1/3 cup (83ml) milk
2 tablespoons butter
2 bars (portions) chocolate, chopped
1 teaspoon vanilla essence

Put the sugar, the honey, the chopped chocolate and the milk in a small saucepan. Cook over moderate heat, stirring continuously.

Bring it to the boil until it thickens. Remove from the heat and add the butter and the vanilla essence. Use this coating as soon as it is ready.
