Carrot bonbons

COMMENT
These sweets are delicate in flavour and texture as well as in presentation. Their flavour improves with the time, so it is better to store them for some days. This is an ideal treat for small children as it provides them with vitamins and is healthy. This recipe has been contributed by Isabel Zen, from Canelones, Uruguay.

Makes 40

INGREDIENTS
1kg carrots, puréed
900g sugar
finely grated rind of one orange
juice of two oranges
more sugar, as required
small paper cases

PREPARATIÓN
Wash and peel the carrots.
Cook in boiling water, inside a saucepan, over a moderate heat until soft.
Drain thoroughly and purée.

Place the puréed carrots in a saucepan with the orange rind and juice and the sugar.
Mix well and cook over moderate heat, stirring continuously for 25 to 30 minutes or until the mixture dries up.

Remove from heat and cool.
Spoon some mixture into your hands and form small balls.
Roll them over sugar until well coated.
Serve in small paper cases.
