Banana cake

Serves 12

100g butter, at room temperature
1 ¼ cups (250g) sugar
3 eggs
vanilla essence to taste
1 cup bananas, puréed
2 cups (250g) flour
3 teaspoons baking powder
pinch of bicarbonate of soda
pinch of salt
1/4 cup (60ml) milk

Beat butter and sugar until creamy.
Add slightly beaten eggs and mix well.
Stir in vanilla essence and puréed bananas.

Sift together flour, baking powder, bicarbonate and salt and fold into mixture.
Blend well and pour into a well greased and floured loaf tin.

Bake in a moderate oven for about 50 minutes.
Remove from oven and cool for a few minutes before turning out.
