Makes 2 dozen
INGREDIENTS
2 cups (240g) flour
1/4 cup (50g) sugar
2 eggs
finely grated rind of 1 lemon
1 cup (250ml) milk
4 apples
½ teaspoonful baking powder
pinch of salt
oil for cooking
PREPARATION
To make batter, place flour and baking powder in a mixing bowl and make a well in the center.
Combine egg yolks, milk, sugar, lemon rind and salt and mix into flour to make a batter of a smooth consistency.
Whisk the egg whites with 1 tablespoonful of sugar until stiff and fold them into the batter. Wash, peel and core the apples.
Cut them into 1 cm- thick rings.
Heat oil in a large saucepan.
Dip apples in batter to coat.
Drain off excess of batter and fry the apples in hot oil until golden.
Drain on absorbent kitchen paper.
Serve warm, sprinkled with sugar and ground cinnamon.
